Berry Spinach Salad w/ Strawberry Dressing

Celebrate the unofficial beginning of summer with this fruit salad and a great rosé.

Although it’s still officially spring, for us summer really begins with Memorial Day weekend.  As the days become warmer, we look to the farmers markets for strawberries and green produce, which are now beginning to ripen beautifully. And what better way to enjoy them than in a fresh salad brimming with different textures from sweet fruit, crisp lettuce, and crunchy pecans?   The recipe’s sweet / tart dressing made from honey and vinegar continues these contrasts while pulling the entire salad together.

We think the best wine to usher in the summer and complement this salad is a rosé. We love a great rosé because it combines the rich flavors of a red wine with the refreshing qualities of a white.

And the good news is that these rosés double as the perfect patio wine.

Bieler Pere et Fils 2012 Bieler Pere et Fils Rosé is a delicious dry rosé from Provence. This rich, deeply colored rosé from five hillside vineyards of Coteaux d'Aix in Provence is Syrah-driven (55%) blended with 25% Grenache, 15% Cabernet Sauvignon and 5% Cinsault. It’s soft cranberry-red in color with a gorgeous nose of raspberry, cherry, and wild strawberry. It is beautifully crisp and flavorful on the palate with medium body and notes of red berries, bing cherries, spice and no oak. The finish is long and refreshing, with a spicy minerality.

Villa Wolf Pinot Noir Rose 2011 The Villa Wolf Pinot Noir Rosé from Germany is a true rosé, made with the traditional process of separately fermenting the juice from the grapes versus the juice from the skins, and then blending them later.  This process requires more effort, but a taste shows you it is well worth it.  The process extracts a lovely salmon color from the Pinot Noir grapes. The resulting wine is juicy yet light and refreshing, with deliciously bright fruit flavors and a clean, zippy finish.
