Mango Salsa.

Preparation:

3/4 Cup Strawberries, finely diced 3/4 Cup Mangos, finely diced 1/4 Cup Red Onion, finely chopped 6 Basil Leaves, finely chopped 1 TBSP Fresh Lemon Juice 1/4 tsp. Sea Salt 1/4 tsp. Black Pepper

Combine all ingredients and allow to sit in the refrigerator for a few hours, covered.

Serve with tortilla, cinnamon and sugar chips or over grilled chicken breast or tilapia.

Now for the wine pairing-

The tangy and slightly sweet mango sauce cries out for a crisp white wine with that can stand up to the intense flavors in this dish.  You have two options for a perfect wine pairing– either sweet but crisp or fruity and crisp. So, why a sweet wine?  One of guides in pairing is to match the flavor profiles of the wine to your sauce, or in this case, salsa on the dish.  The La Ardilla Moscato Valencia is just the wine for this.  It is intensely fragrant with a floral nose, and has notes of ripe fruit, citrus, and honeyed apricot.  The wine’s crispness matches balances well with the tart/sweet flavors of the salsa.  Not quite sold on a sweet wine for these dishes?  Pour this and a dry one, and do your own taste test. $10.99. If dry is your style, you can’t do much better than the Columna Albarino.  This Spanish grape is rapidly gaining in popularity, and many refer to it as the “liquid gold of Galicia.”  The wine is delicate and floral with subtle, elegant flavors that provide the perfect background for this spicy dish. $16.49.
